Hotel bars are returning to their pre-Prohibition ranking as a mark of distinction and a way to pull in clients with unique drinks and a taste of the local city. Hotels, from grand to boutique, are investing in bars and expecting a 4.4% growth in food and drink sales this year, according to a Technomic forecast. "We now have bars that really drive business," said Kimpton Hotels' Senior Director of Beverage Programs Emily Wines.
