Consumers are willing to buy lower-salt bread and may not even notice the salt reduction if it's small enough, according to new research conducted at Oregon State University. The study found that consumers couldn't tell the difference between full-salt bread and 10%-reduced salt bread, and they tasted a difference but still liked and would buy the 20%- and 30%-reduced salt bread.
