Arizona produced roughly 85,000 cases of wine last year, up from just 37,000 cases in 2011, largely from its Verde Valley, Sonoita and Willcox/Cochise County regions, which use a bevy of grapes because the land is so varied. Intense heat, cold nights and other weather is "why we plant so many varieties. We're hedging our bets," said Kent Callaghan of Callaghan Vineyards in Sonoita.
