Traceability in the foodservice world requires a transparent supply chain that lets everyone involved know where a product is at any point in the process, says Angela Fernandez, vice president of retail grocery and foodservice for GS1 US. Restaurants need traceability to ensure a safe food supply for their customers and to be able to respond promptly when there's a product recall. "GS1 Standards help make complete and accurate product information available for distributors, restaurants and other operators," she says.
