During Italy's Maialata event, or festival of the pig, friends and family gather to butcher hogs and put every part to good use in a communal meal. The festival came to Portland, Ore., where Camas Davis, founder of the Portland Meat Collective, and butcher Rob Roy demonstrated how to butcher a pig so every part is usable, from the skin, which is used to make lard, to the shoulder, which is turned into sausages.
