Food trucks have expanded from a few spots on the coasts to cities and towns of all sizes throughout the U.S. in the past five years, and three-quarters of today's consumers say food trucks have influenced their behavior at restaurants and grocery stores, according to Datassential. Restaurant chains have responded to the mobile eateries' adventurous menus with new items of their own, such as Korean steak tacos, waffle sandwiches, gourmet grilled cheese and small-batch sodas.
