Ice cream makers are embracing consumer flavor trends with varieties such as balsamic vinegar and hot sauce. A surge in boutique ice cream shops and artisan producers have pushed the envelope, and producers are turning to sweet vegetables and even alcohol for inspiration. "You're seeing the same kinds of trends in ice cream that you're seeing in other foods," said Peggy Armstrong, spokeswoman for the International Dairy Foods Association. "People are willing to experiment."
