A Florida high school is offering a made-to-order salad bar using lettuce grown on campus during a four-week pilot project. Officials say the healthy option has been well-received, with students waiting in line for salad filled with protein, vegetables and fruit fixings. "I'm hearing such excitement. The numbers really grew quickly overnight, and it's interesting to serve salads that are all so different," school nutrition professional Daryl Falkowski said.
