Ian Burrows decided to forgo the "somm ego wines" when he was appointed as sommelier at two-star Michelin restaurant Atelier Crenn, opting instead to feature classic wines "that people can relate to," such as Domaine Roulot and Chateau de Beaucastel. The Level III sommelier enjoys recommending wines that are off-trend, such as a bold pinot noir paired with the right dish. Burrows recently discovered and now recommends the Madeira Boal "10 Year Old," and also suggests the El Molino Star Vineyard pinot noir paired with roast duck for a weekday meal.
