More hotels may be moving away from room service, but among certain clientele the expectation that room service is available hasn't gone away, said hotel experts gathered at the recent American Hotel & Lodging Association Food & Beverage Council meeting. But changes are in the works, said industry experts, ranging from shifting to a sous-vide style of food preparation to revamping minibars to feature higher-end, local products.
