Ethnic produce, spices and sauces, a hint of smoke in cocktails, and mashup dishes are having their moment on American menus, as long as consumers believe the dishes are authentic and made with premium ingredients, according to Nancy Kruse, president of The Kruse Co.
"Consumers place high value on authenticity," she says. "But the definition of that becomes problematic because it is highly perception-driven."
