A new study shows that the skins and seeds left over from the wine-making process, called wine grape pomace, can be used in baked goods to increase their fiber and antioxidant content. Taste, color, and texture could be affected by using the wine pomace, however the study was successful with the use of pinot noir pomace as a replacement for wheat flour in levels as high as 15%.
