Hotel restaurants take pains to keep their menus, decor and ambiance fresh and seasonal, from the local produce served at California's SALT Restaurant in the Marina Del Rey Hotel to the rooftop ice bar at the Lexington Hotel in Minnesota. "Summer menus often feature fresh vegetables and fruits along with crisp lower fat proteins, whereas a winter menu may rely heavily on a protein to carry its flavor as produce will not be as readily available," said Tim La Duke of Waterfront Beach Resort in Huntington Beach, Calif.
