Kraft Foods has announced it has patented a soluble corn fiber that maintains the sweetness profile of sugar in chocolate while reducing sugar content by up to 50%. Along with a low viscosity that improves chocolate processing, the corn fiber may meet dietary guidelines for daily fiber intake, according to a company statement.
