Recovering from the pandemic will take time for restaurants, but operators will use all the lessons they learned in 2020 to ultimately come back stronger, Hudson Riehle of the National Restaurant Association said during a panel event Monday. Last year's US restaurant sales fell an estimated 27% compared to forecasts at the beginning of 2020, but a recent survey revealed pent-up demand for dining out.
