Sbarro has no plan to leave mall food courts, but it has been on a mission to grow in its niche: catering to impulse buyers who grab a slice on the go, CEO David Karam said. "The metaphor I always give is, you don't go into a bakery and buy anything if the shelves are empty, right? You want to see a beautiful abundant display of baked goods, and that's the way that Sbarro operates," he says.
