Researchers found that overweight individuals who consumed a vegan diet with increased total carbohydrate intake and total and insoluble fiber intake had a significant reduction in insulin resistance, body weight and fat mass, compared with the control group. The findings were based on 75 participants with a body mass index between 28 kg/m2 and 40 kg/m2 and was published in the journal Nutrients.
