Studies examine how foods, consumption impact blood glucose levels

Three studies presented at the American Society for Nutrition meeting showed the effect of food on blood glucose levels, including one that linked a plant-based diet to as much as a 60% reduced risk of type 2 diabetes. The second study associated a higher consumption of vitamins B2 and B6 with a lower type 2 diabetes risk, and the third study found eating vegetables first before rice or meat was tied to lower blood glucose levels.
