Study: Low-gluten diet benefits are due to fiber

The benefits of a low-gluten diet are decreased bloating and a small weight loss, and those benefits are linked to the diet's dietary fiber rather than lack of gluten, according to a study published in Nature Communications. "Gluten-free may not necessarily be the healthy choice many people think it is," said Dr. Oluf Pedersen of the Novo Nordisk Foundation Center for Basic Metabolic Research at the University of Copenhagen in Denmark.
