A Technical University of Munich research team has identified the substance responsible for giving protein extracts from rapeseed a bitter taste, a compound known as kaempferol 3-O-(2'''-O-sinapoyl-β-sophoroside). The discovery is a step toward turning rapeseed into a viable human food source.
