Linseed-chia emulsion can replace fat in pork products

Researchers successfully substituted up to 60% of the fat in pork burgers with a hydrogelled emulsion of chia and linseed oils without a noticeable difference in taste, texture or appearance. The technique could lead to healthier pork products and could perhaps also be applied to other meats or even plant-based meat alternatives.
