Champions of soybeans with high oleic acid content, who see it as the way to regain market share lost with the shunning of trans fats, are still waiting for demand among food producers to spur farmers to plant them. "I think we're starting to see a lot more interest in the high oleic oil itself and that's something that has been kind of a challenge over the past few years," said Kevin Wilson, a farmer and a director on the United Soybean Board.
