Consumers are taking an increasingly active role in their food, which they see as key to their health and a reflection of who they are, according to presenters at the Food Forward summit last week. "Eaters are more than just consumers at the end of the supply chain. They have agency, they are co-creators, they take a more active role in what is being produced and how," said Sarah Smith, research director of the Institute For The Future's Food Futures Lab.
