Christina Balzebre branched out from her work at New Orleans restaurant Willa Jean to start Levee Baking Co., where a Queen Cake is on offer next to fruit galettes, cookies and rolls. For her feminist take on the iconic Mardi Gras dessert, she uses Louisiana pecans and candied citrus made from whichever fruits are available from the Crescent City Farmers Market.
