Olam Coffee has released an ingredient range featuring coffee cherry cascara, the antioxidant-rich outer layer of the coffee bean, for use as a functional ingredient in hot and cold drinks and beverage powders. "There also is the environmental benefit of utilizing the skin and pulp that's otherwise discarded as a byproduct in the primary processing stage," said Siva Subramanian, Olam Coffee's vice president of innovation.
