Chef Francois Perret has reshaped the croissant into an oblong pastry that is denser and produces fewer crumbs when it's eaten. Perret will serve his reimagined croissants at the Ritz Paris hotel's new pastry shop, Ritz Paris Le Comptoir, which will offer a selection of pastries, sandwiches and drinks designed for takeaway.
