Plant-based food brands court consumers in Veganuary

Why it matters: I'm on my fourth day of a vegan diet, which I'm trying for health and environmental reasons, but I had no idea I was part of a larger trend until I read about "Veganuary," which began in the UK in 2014 and has since spread to other countries. The idea is to abstain from animal products during January, whether out of concern for animal welfare or just to eat healthier. So far I've been eating a lot more vegetables and plant-based protein sources and trying new recipes. I doubt I'll keep doing this in February, but I think Veganuary will be beneficial for me -- and for the thousands of other participants around the world. -- Cathy

Veganuary is an initiative aimed at getting people to eat a plant-based diet in January and beyond, but registered dietitian nutritionist Beth Kitchin says instead of an all-or-nothing approach to a plant-based diet, it may be better to start with a few changes. Kitchin says a vegan diet is healthful but it may not be easy, and easing into it may be a better long-term strategy and could help avoid frustration.
