Healthy, locally grown food is on the menu at Pa. school
As school menus transform under new federal standards, districts are taking different approaches to meeting the new requirements, says registered dietitian Lori McCoy, a vice president of the School Nutrition Association of Pennsylvania. McCoy, who serves as a foodservice director, says that strategies vary according to available equipment, funding and staffing. One Pennsylvania school has hired a new chef and begun serving more fresh, locally grown food.
