Let carrots take center stage

Carrots are often included in simple meals where they play second fiddle to a pot roast or add a little crunch to a salad, but there are plenty of ways to let carrots shine in their own right. Carrot soup infused with chive oil and vanilla or Turkish carrot salad with a kick of cayenne pepper elevate the common vegetable and bring out unexpected flavors.
