Co-op takes advantage of growing specialty cheese market

A group of Wisconsin dairy farmers have formed the Edelweiss Graziers Cooperative, which will specialize in making specialty, grass-based cheese. "Consumers are seeking more signature cheeses with bolder flavors, and grass-based cheeses are next on the horizon to help meet that demand," said Dairy Business Innovation Center Founder and Chairman Dan Carter.
