Culinary compass: Comfort, value and global flavors define 2026 restaurant trends

Nostalgia, comfort and “flavor escapism” are expected to drive menu innovation in 2026, according to The National Restaurant Association‘s 2026 What’s Hot Culinary Forecast. The annual report, which is sourced from a survey of hundreds of culinary professionals, reveals that restaurants plan to meet consumer demand for emotional and financial comfort in the coming year by reimagining classic dishes, focusing on local sourcing and providing value-driven options. 

“Comfort and value are the twin pillars shaping America’s menus right now,” said National Restaurant Association Senior Vice President of Research & Knowledge and Chief Economist Dr. Chad Moutray. “Consumers are seeking meals that deliver joy and familiarity without breaking the bank, and operators are meeting that ask with creative takes on comfort classics and sourcing local ingredients that make healthy choices easy.”

Here is a look at how restaurants can deliver on those and other dining trends expected to top the charts next year.

The menu spotlight: Comfort classics, reimagined

Consumers are seeking comfort and nostalgia in their dining experiences, with dishes like the smashed burger making a comeback through innovative new twists, such as smashed burger tacos. Smashed burgers also offer operators some control over price, thanks to their lower meat-to-bun ratio and faster cooking time.

Restaurants are also responding to the demand for comfort food and “flavor escapism” by reinterpreting global homestyle dishes, such as Caribbean curry bowls, to transport diners to different parts of the world. A focus on familiar classics such as soups and stews is also expected to build on diners’ desire for emotional connections and novelty.

Navigating the consumer mindset: Health and transparency

Protein is expected to remain a prominent macronutrient in 2026, with consumers continuing to seek protein-rich foods for muscle building and weight management. Restaurants are expected to elevate this trend by incorporating spicy flavors, such as chili-lime and ghost pepper hot honey, to enhance the taste of proteins like meat, seafood, and tofu – a move that allows diners to enjoy adventurous flavors without compromising their health goals.

Low- and no-alcohol beverages are also gaining popularity, particularly among millennials and Generation Z, while freeze-dried fruits are being utilized more frequently due to their versatility, health benefits and extended shelf life.

Ingredient integrity will continue to be top of mind for diners and operators who will need to prioritize transparency and “cleaner” recipes with fewer additives and dyes. In addition, allergen-friendly menus, including gluten-free, nut-free and dairy-free options, will continue to expand.

Restaurants are expected to increasingly feature locally sourced ingredients as menu innovations emphasize freshness and sustainability. Packaging also comes into play as more restaurants adopt compostable and reusable options to replace single-use plastics in order to create a more eco-friendly footprint. Clear menu labeling, icons and cues will help diners make quick, informed choices about ingredients and sustainability.

The bottom line: Value is the driver

Just as diners are looking for comfort foods that nourish their bodies, they are also seeking dishes that nourish their budgets. Restaurants will continue to offer value menus and special deals as operators strike a balance between creativity and affordability for price-conscious diners.

Together, restaurant trends for 2026 combine to create a dining landscape defined by balance and meaningful tie-ins with what guests value most: connection, novel experiences and affordability.

“The 2026 forecast highlights a restaurant industry that continues to adapt to changing tastes and economic realities,” Moutray said. “It is driven by connection and creativity, bringing fresh energy to classic favorites while celebrating the global flavors that make dining out an experience.”
