In today’s increasingly competitive foodservice landscape, diners no longer define value solely based on price. According to the National Restaurant Association’s 2026 State of the Restaurant Industry report, diners increasingly evaluate value through the lens of the total dining experience, encompassing not just dollars spent but flavor, quality and dependability.

That shift creates a massive opportunity for foodservice operators to differentiate themselves with premium, branded ingredients that consumers know and love, all while creating a more memorable dining experience.

“Our 2024 Technomic brand equity research indicates that consumers are more willing to pay for menu items made with ingredients they recognize and trust — particularly when those ingredients are visibly named on the menu,” said Dave Dulyx, vice president of Professional Products for Ghirardelli Chocolate Company.

The “worth it” factor

As diners become more selective with discretionary spending, operators face growing pressure to deliver experiences that feel memorable and worthwhile. Recognizable brands can instantly communicate quality, whether through a premium cheese in a signature appetizer, a well-known sauce brand in a limited-time offer or premium chocolate featured in desserts and beverages. Incorporating branded products into menu options is a simple way for foodservice operators to elevate value for their diners without completely overhauling their menus.

“Our 2024 Technomic Ghirardelli Brand Equity Study shows that consumers associate Ghirardelli with premium quality, better taste and higher-end experiences,” Dulyx said. “Operators who feature the Ghirardelli name benefit from increased consumer confidence and higher purchase intent. Featuring the Ghirardelli name helps signal indulgence and reliability, reframing premium items as worthwhile ‘small treats’ or accessible luxuries.”

Streamlining workflow without sacrificing creativity

At the same time, operators continue to navigate rising food costs, labor challenges and increasingly complex menus. Consolidating ingredients across dayparts and menu categories can help simplify back-of-house operations while reducing waste and training demands. “Our formats and flavors are intentionally versatile to allow operators to build multiple menu items across dayparts from the same core ingredients, maximizing ROI per SKU,” Dulyx said.

Ghirardelli’s foodservice-focused formats — including pumpable sauces, flavored frappe mixes and no-tempering-required compound wafers — are designed to improve consistency and efficiency across both high-volume kitchens and smaller café environments, Dulyx explained. Standardized products can help shorten prep time, simplify training and reduce reliance on specialized labor.

The company’s “Made with Ghirardelli” program also allows operators to feature approved branding and menu language, helping operators differentiate their menu while maintaining brand integrity, strengthening consumer trust and supporting marketing efforts.

That versatility extends beyond desserts. Though generally associated with quality desserts, Ghirardelli products can extend across the entire menu and every daypart. For example, they can boost savory dishes with cocoa-based spice rubs and mole sauces. Even the increasingly popular salted caramel — a familiar, yet indulgent flavor that adapts well to both classic and innovative formats — can be used in sweet-savory applications like a caramel gochujang sauce, Dulyx explained.

“Ghirardelli Majestic Cocoa Powder and select dark chocolates, such as our 100% Cacao Chocolate, are particularly well-suited for savory uses,” Dulyx said. “These products deliver deep cocoa flavor without overt sweetness, allowing chefs to layer bitterness, warmth and richness into savory dishes.”

As operators look for ways to balance efficiency, differentiation and guest satisfaction, premium ingredients are increasingly serving multiple purposes at once: strengthening consumer perception, simplifying execution and supporting broader menu innovation.
